I love the part where you stop telling your own memories but actually did as your title says...talking about The Bear.
People want to know if the chaos shown in The Bear is real and how accurate it is. So I wanted to share some real stories of what happened when I worked in high pressure kitchens, so you can compare reality with the show.

I have worked FOH in "nice" restaurants, think Le Halles from the king AB in S.F., NYC, Australia, Vietnam and a pub in a tiny place in England. What would be your advice for FOH that would help BOH for the greatest success?
So I haven't been in the industry for near yl 10 years, but I can tell you something that was always very clear in the top kitchens... organisation. The top kitchens are built on very clear systems. This reduces the time needed to make decisions and helps service to flow better. Create systems and things we willl easier (same advice applies to most things in life). Also great communication and building relationships with the BOH staff. They are under ALOT of stress. And so are you. So as FOH, you are the magic between the BOH and the diner. So it's your job to make sure you give the diner a great time and manage their expectations so the BOH can deliver. Hopefully that was helpful in some way.

Different worlds. I was a chef between 17 and 21/22. Then I started my branding agency at 23 and have been developing brands since. You'd be surprised how many lessons I learnt as a chef that have helped me in running my business to be honest.
To be fair he started pretty early. Most chefs don't get into really top kitchens until 25ish.

I had lots of bartending experience but got hired in a kitchen as a line cook for a chef. He was absolutely insane. He came from that background and was a total psycho. People would come and leave immediately but I did over 500 hours until he fired me. Asshole would go on a rampage then give me a "nip and a sip" aka a shot of scotch and beer after screaming his face off. I randomly texted himonths later that I used to fantasize about punching him in the face. I woudk literally get off work and watch the same youtube video of a chef getting punched in the face. I watched it almost everyday lol.
